Two of our most humble and beloved foods, Fritos con salami dominicano, can be served as an easy, tasty snack or even as a quick dinner. Tostones (twice-fried plantains) with fried slices of Dominican salami sausage are the kind of indulgence we sometimes partake in.

Why we ❤️ it

Dominican fried salami is not just for breakfast with Mangú, and Tostones (green plantain fries) are more than just a side dish.

Combine these two favorites in this filling snack for the ultimate Dominican snack, brunch, or dinner.

What's Dominican salami?

Dominican salami has very little in common with its Italian namesake. Our salami is a kind of potted meat product in a thick sausage we typically cook before eating.

It's an inexpensive protein source used in several popular dishes (see further down).

Serving suggestions

Tostones con salami is typically served with just a drink (check our Dominican juices and Dominican batidas recipes), but you can go beyond the traditional and serve with a dip as a snack.

Some of my favorite dips are my favorite Mayo ketchup pink sauce, this Aguacate dip, this Avocado mayo, and a quick garlic "mojo" that appears on the video.

You can also serve this snack with our traditional Queso frito if you want.

Top tips

  • Crispy tostones: My favorite tip to make crispy tostones is to flatten them as thinly as possible; this will keep them crispy longer, too.
  • Salt: I prefer coarse salt over granulated salt to sprinkle on tostones, so try it if you have it at hand.

About this recipe

This simple dish is a once-in-a-while indulgence, so we enjoy it very much when served.

There aren't that many variations on this dish, though I suppose some people may prefer their salami thinner and crispier, or thicker and softer. You can try both and see which one you prefer.

Frito con Salami [Video+Recipe] Tostones with Dominican Salami

Ingredients

To make salami frito

  • 1 pound Dominican salami
  • 1 cup oil for frying

To make tostones (fritos verdes)

  • 2 plantain (green, unripe)
  • ½ cup vegetable oil
  • 1 tablespoon salt, (or more, to taste)

Dip

  • 1 tomato, chopped
  • 4 sprigs parsley
  • 1 clove garlic
  • ¼ teaspoons pepper (freshly-cracked, or ground)
  • 1 tablespoon olive oil

Instructions
 

1. Fry salami

  • Frying salami
    Heat the oil in a skillet over medium-high heat. Fry the salami slices on both sides until lightly browned and the edges are darker.
    Let them rest on a paper towel to absorb excess oil while you make the tostones.

2. Peel the plantains

  • Peeling
    Peel the plantains (see how to) and cut into 1 inch [2.5 cm] thick slices.

3. Make fritos verdes

  • Frying
    To fry the tostones, heat the oil over medium heat in a small saucepan, and fry the plantains till light golden (about 5 mins).
    Flatten the plantains using a tostonera (Amazon affiliate link) to about ¼" [0.5 cm] (I prefer thin tostones as they are crispier and stay so longer). You can also use the bottom of a big jar and press on a cutting table if you don't have a tostonera.
    Fry the plantains again until they turn golden yellow on both sides (about 5 minutes).
    Sprinkle with salt to taste and serve immediately. Best served freshly fried.

2. Make dipping sauce (optional)

  • Make dip
    Pulse all the ingredients (tomato, parsley, garlic, pepper, olive oil) until thoroughly blended but not liquefied. 

Cook's Notes

My favorite tip to make crispy tostones is to flatten them as thinly as possible; this will keep them crispy longer, too.
