Why we ❤️ it
Typically we serve our avocados in chunks or slices with our meals, but if you're feeling like serving it a bit more refined, this colorful avocado salad will do it.
Think of it as avocado "con ropa de misa".
Avocado in Dominican cuisine
If you come to the Dominican Republic without knowing a thing about our cuisine--and the same thing could be said for most of Latin America--you may be inclined to think that our cuisine is similar to Mexico's. This is something I've seen many times.
And nothing could be further from the truth.
No, we don't eat guacamole, but we love, LOVE avocados. I may have even shown up to a Dominican restaurant with an aguacate de emergencia, in case they don't have any. Seriously.

Serving suggestions
This is a great choice with any of moro rice recipes, I especially love it with Moro-locrio, Moro de habichuelas rojas, and Moro de habichuelas negras.
Complete your meal with Pollo guisado, Res guisada, Cerdo guisado, or Berenjenas guisadas.
Top tips
- To make ahead: Mince onions and pepper, make the vinaigrette, but only cut and dice the avocados shortly before serving as they'll oxidize and darken soon after.
- Adding more ingredients: Sweet corn, diced cucumber, diced tomatoes, and even lettuce. Get creative, avocado goes with nearly everything.

Ensalada de Aguacate [Video+Recipe] Avocado Salad
Ingredients
- 2 avocado, (or 3 small ones)
- ½ small red onion, minced
- ½ red bell pepper, minced
- ½ yellow bell pepper, minced
- Juice of 1 lime
- 1 tablespoon apple cider vinegar
- 2 tablespoons olive oil
- ¾ teaspoon salt, (or more, to taste)
- pepper (freshly-cracked, or ground), to taste (optional)
- A handful of cilantro leaves, (optional) and extra for garnish
Instructions
1. Cutting avocado
- Peel and dice the avocados and scoop into a bowl.
2. Mixing ingredients
- Mix the avocado with the lime juice. Combine and red and yellow bell peppers with onions. Mix well.
3. Mix dressing
- Combine the vinegar, oil and salt. Whisk to combine
4. Dressing salad
- Mix in the vinaigrette, and add black pepper to taste (and more salt if you find it necessary).Mix in the cilantro.
4. Serving
- Decorate with cilantro leaves.Serve inmediately (see notes).
