What is eggplant?

Eggplant is the fruit of a plant of the same family as tomato and potato. In Spanish, eggplants are almost universally known as berenjenas.

Eggplant is known in English as eggplant (USA, Canada) or aubergine (UK).

Benefits

Eggplant is an inexpensive vegetable that is easy to cook, widely available, and popular in vegan, vegetarian, and keto diets. Eggplant is low in carbohydrates and contains small amounts of phosphorus, calcium, magnesium and iron, as well as vitamins A, B1, B2, B3, C and folates. It contains a moderate amount of potassium.

How to store

Wipe the skin with a dry paper towel and place the eggplant (uncut) in a plastic bag and store in the crisper drawer of the refrigerator, where it will keep for up to a week. Be sure not to bruise the skin, as bruises tend to be the first spots to go bad.
