- 2 red pitahayas, or another color [350 grams], plus a few wedges for garnish
- 1 can coconut milk, 16 ounces [400 milliliters]
- ¼ cup lime juice, or ⅓ cup lemon juice
- 2 cups ice
- ¼ cup brown sugar, or agave syrup (or to taste)
- 1 tablespoon vanilla extract

1. Peeling and chopping dragonfruit
To cut the pitahaya into cubes, cut it in half, and cut the flesh in one direction and then in the opposite direction without piercing the skin.Use a spoon to remove the flesh, which will end up cut into cubes.⚠️ Place the fruit on a cutting board and never cut it while holding it in your hand to avoid accidents.
2. Combining
In a blender, combine the chopped pitahaya, coconut milk, lime juice, ice, brown sugar, and vanilla extract.
3. Blending
Blend until everything is dissolved.
4. Serving
Serve immediately. Garnish with fruit wedges (optional).
Top tips
- Type of pitahaya: There are several types of dragon fruit. In my opinion, the fuchsia one is the juiciest, but you can choose any other type or mix them together.
- With milk: You can use evaporated milk instead of coconut milk, and you can use condensed milk to sweeten it if you prefer.
- Other recipes: If you have leftover pitahaya, you can make it into a lovely dragon fruit juice, or this lovely dragonfruit in spiced syrup dessert.
Variations
