Why we ❤️ it

  • The dragonfruit or pitahaya smoothie can be as colorful as the color of the pitahaya you choose.
  • It is a dairy-free and vegan drink that can also serve as a delicious mocktail to serve to friends.
  • This tropical delight is also a perfect snack for children and adults alike.
  • You can adjust the amount of sweetener you use, or use none at all, to make it even healthier.
  • Apart from dragon fruit, all the ingredients are easy to find.

  • 2 red pitahayas, or another color [350 grams], plus a few wedges for garnish
  • 1 can coconut milk, 16 ounces [400 milliliters]

Video

Preparation

1. Peeling and chopping dragonfruit

  • Picando la pitahaya.
To cut the pitahaya into cubes, cut it in half, and cut the flesh in one direction and then in the opposite direction without piercing the skin.
Use a spoon to remove the flesh, which will end up cut into cubes.
⚠️ Place the fruit on a cutting board and never cut it while holding it in your hand to avoid accidents.

2. Combining

  • Combinando ingredientes para batido de pitahaya.
In a blender, combine the chopped pitahaya, coconut milk, lime juice, ice, brown sugar, and vanilla extract.

3. Blending

  • Licuando batida de pitahaya.
    Blend until everything is dissolved.

4. Serving

  • Batido de pitahaya.
Serve immediately. Garnish with fruit wedges (optional).

Top tips

  • Type of pitahaya: There are several types of dragon fruit. In my opinion, the fuchsia one is the juiciest, but you can choose any other type or mix them together.
  • With milk: You can use evaporated milk instead of coconut milk, and you can use condensed milk to sweeten it if you prefer.
  • Other recipes: If you have leftover pitahaya, you can make it into a lovely dragon fruit juice, or this lovely dragonfruit in spiced syrup dessert.

Variations

You can serve this milkshake as a snack, and if you want something more substantial, you can serve it with one of these sandwiches.
