At home, I am always searching for "the next great dish", the one we like so much it becomes part of our family tradition. These breaded fried turkey tender turkey chops win as the perfect dinner dish any time of the year.

- Large skillet non-stick pan
Ingredients
- 2 cups panko, or homemade breadcrumbs
- ½ tablespoon salt
- ¼ tablespoon black pepper , (freshly-cracked, or ground)
- 1 tablespoon garlic cloves
- 1 tablespoon onion powder
- 8 slices turkey legs, thawed and clean of small bones (see notes)
- 4 eggs , (medium), whisked
- 1 cup all-purpose flour
- ¼ cup vegetable oil, or gheeghee (clarified butter) room temperature

Preparation
1. Making breadcrumbs
In a large mixing bowl, combine panko, salt, pepper, garlic powder, and onion powder and stir to combine.
2. Breading
Cover the turkey chops with flour and shake off the excess. Drench each turkey chop in the egg (use tongs to dip them into the egg), them cover each with the breadcrumbs.Set them aside.
3. Frying
Heat the oil in a skillet or pan over medium heat, about 350°F [177°C].
4. Frying the chops
Place 2 or 3 chops at a time (don't crowd them) and cook until they turn golden brown on the cooking side, flip and cook the other side (4 minutes on each side or until the internal temperature measures 165 °F [74 ºC]). Remove the turkey from the pan and place it on paper towels to remove excess fat. Repeat the process with the remaining butter and chops until they are all cooked.
5. Serving
Serve the turkey as soon as possible so the crust stays crispy.See serving suggestions below the recipe.
Top tips
- What is a turkey chop? Turkey chops are actually bone-in sliced turkey legs, which once in a while turn up discounted in our neighborhood supermarket, making it an interesting option to add variety to our menus. Sometimes boneless turkey cutlets (flattened turkey breast) are found labeled as "chops".
- Removing bones: Once you have thawed the chops and before cooking, press on them with your fingers to find and remove any pieces of bone or cartilage.
- Fat for frying: For this recipe you need some fat with a high smoking point, like vegetable oil (peanut or corn), or animal fat like ghee, lard, or schmaltz.
- Choice of pan: Using a non-stick pan reduces the amount of fat needed.
- Substitutions: You can make this recipe with turkey breast cutlets, or chicken cutlets (sliced chicken breast) following the same method, but bear in mind that the cooking time in a turkey cutlet recipe would be shorter as white meat (breast) cooks faster than leg meat.
- Frying time: It takes about 10 minutes to cook thin turkey pork chops to be cooked to an internal temperature of 165 °F [74 ºC], which is the recommended temperature to cook turkey safely.
Serving suggestions
Serve on mashed potatoes, or with oven-fried potatoes, and if you want to drizzle with a sauce, you'll love this guava BBQ sauce, this copycat Popeyes sweet heat sauce, or your preferred BBQ sauce.

Good recipe, I used turkey breast instead, it's not as juicy and fatty as turkey legs, but much easier to find. It tasted good served with mashed potatoes like in the photo. I drizzled it with some BBQ sauce.
