- 2 pounds starchy potatoes, [0.9kg] see notes
- Salt
- 4 cloves garlic
- ⅓ cup milk, [60 ml]
- ⅓ cup sour cream, [120 ml}
- ½ stick butter, [56.7g] plus extra to garnish
- Black pepper
- Chopped chives, for garnish

Preparation
1. Wash and peel
- Scrub, peel, and rinse your potatoes, then chop them into similarly sized pieces, so they finish cooking at the same time.
2. Boil the potatoes
- In a large pot or saucepan, put the potatoes and enough water to cover them plus an inch [2.5 centimeters] above the potatoes. Add a tablespoon of salt and garlic cloves to the water.Bring to a boil over medium heat and simmer until the potatoes are fork-tender (around 17 minutes). Drain the water, discard the garlic, and place the potatoes in a large mixing bowl.
4. Mash
- Using a potato masher or potato ricer, mash the potatoes, incorporating sour cream and butter as you go along. Start adding milk, mashing until the potatoes have the desired consistency.
5. Season
- Taste the potatoes and season with salt and pepper to tasteServe garnished with chives and butter.
Top tips
- Picking potatoes: Russet potatoes are preferred for mashed potatoes, but Yukon Gold potatoes work great too.
- Making it creamier: If you want to make mashed potatoes with a very creamy and fluffy texture, you can beat it with a stand mixer or electric hand mixer after you finish.
